WHAT? Steak? As a VEGAN? Don’t worry. We haven’t killed anything for this steak dinner…

Cauliflower. THE great and versatile vegetable!

  • Cauliflower contains a wealth of anti-inflammatory nutrients to help keep inflammation in check. You need some level of inflammation in your body to stay healthy. BUT, it’s also super common, for the inflammatory response to get out of hand. If our immune system mistakenly triggers an inflammatory response when no threat is actually there, it can lead to massive inflammation-related damage to the body, which is actually linked to cancer and other nasty diseases!
  • Antioxidant and phytonutrient WINNER. Cauliflower is packed full of vitamin C as I mentioned before (and we thought it was just oranges!), beta-carotene, kaempferol, quercetin, rutin, cinnamic acid, and much more (all antioxidants). Antioxidants are a natural way of providing your cells with a good enough defence system against attack. As long as we have these important nutrients, our bodies will be able to resist aging caused by our everyday exposure to pollutants, stress, and anything else toxic to our temples (aka bodies). If you don’t have an adequate supply of antioxidants to help demolish those pesky free radicals (the everyday bad stuff and stress), then you can be at risk of oxidative stress, which leads to accelerated tissue and organ damage. So. Eat the white stuff – age slower! WIN WIN!

🔶 INGREDIENTS 🔶

🔺1 large cauliflower
🔺Handful of fresh rosemary
🔺Handful of fresh thyme
🔺2 cloves of garlic (or more to taste)
🔺Salt & Pepper
🔺Tbsp Paprika
🔺2 tbsp melted coconut oil 🔺Chopped onion

🔶 METHOD 🔶

🔺Cut the cauliflower into steak like pieces, chopped onions on top, with fresh rosemary, garlic, thyme, & salt & pepper


🔺Put in the oven (180) with the coconut oil drizzled on top, for 30 minutes until softer (but not soggy!)
🔺Served with boiled baby potatoes, sautéed with mushrooms, courgette, tomatoes & peppers
