INGREDIENTS:
• Chickpeas (Tin is good)
• Vegetables, I used: cauliflower, broccoli, pepper, red onion
• Can of coconut cream or milk
• 1 tablespoon coriander powder
• 1 1/2 tablespoons paprika powder
• 1/4 teaspoon turmeric powder
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon cardamom powder
• 1 teaspoon cumin powder
• 1/4 teaspoon ground black pepper
• Pint of water
• Rice, make whilst cooking curry (I used brown)

METHOD
• Throw the vegetables in a pan with some coconut oil and fry for a few minutes
• Add the chickpeas and all the spices
• Add the water and stir together, let it simmer for 20-25 minutes
• Stir in the coconut cream for a few minutes until mixed and creamy 👌🏼
