Another one of my made up recipes – super delicious and went down really well! Easy to make and packed FULL of protein!
There are so many studies that have shown that eating high fibre foods like lentils can actually reduce your risk of heart disease!! Lentils are also a great source of folate and magnesium, which are big contributors to heart health. Folate lowers your homocysteine levels, which is a serious risk factor for heart disease. Magnesium improves blood flow, oxygen and nutrients throughout the body, letting them all flow round happily doing their thing… Low levels of magnesium have been directly associated with heart disease, so eating lentils will keep your heart happy! As well as digestive health, fibre, protein rich, and a great energy source, lentils are super tasty and versatile and a great alternative to meat mince, so always have them in for quick meals like this!
Ingredients:
10 MUSHROOMS
1 CARROT
1 PEPPER
1 CELERY
JAR OR CUP OF SOAKED LENTILS
10 LARGE TOMATOES (blended)
HANDFUL OF SPINACH
HALF A HANDFUL OF OREGANO
HANDFUL OF BASIL
2 GARLIC CLOVES
DROP OF SOY SAUCE
DROP OF BALSAMIC VINEGAR
SALT & PEPPER
Method:
1. Chop all vegetables except tomatoes & spinach & add to the pan with a little oil and fry for 5-10 minutes
2. Add tomatoes 🍅 & lentils stir into mix & add herbs, garlic, soy sauce & balsamic
3. Leave to simmer for 20 minutes and make the spaghetti, or whatever you’d like with it.
4. Stir in the spinach at the last minute and serve!
