This recipe is so simple and quick to make. I totally made this up to use up some ingredients we had leftover, and it worked so well. It tasted delicious and had a real Italian flavour – a perfect post workout delight!
Ingredients:
Cannellini Beans (either 1 tin or 1 cup of already soaked beans)
1 cup of blended tomatoes
2 tablespoons of tomato paste
Handful of fresh basil
2 tablespoons of wholegrain flour (or GF alternative)
Buns, lettuce, tomatoes & gherkins to serve
Method:

- 1. Add the beans to a bowl
- 2. Add the chopped onion
- 3. Add the tomatoes and paste
- Add the shredded basil
- 5. Add the flour
- 6. Mix together (hands or blender)
- Form patties and add to pan with some coconut oil
- 8. Flip after a few minutes
- 9. Serve with some soft buns, lettuce, fresh tomato and gherkins!
