Cheese. One of the first things people say they’ll miss when becoming vegan. Look no further, this recipe is both quick, easy and deliciously cheesy! It will go with everything you make that you once used cheese for, including nachos, chile, lasagne and mac and cheese!

The best thing – it is also NUTRITIOUS! Cheese – nutritious! This cashew cheese is packed FULL of B vitamins, magnesium, calcium, vitamin E (see why they’re so important here), and is also a good source of protein and fibre – especially important for athletes. Protein helps muscle repair of course, and fibre We need plenty of dietary fibre to properly process and digest the food that we eat.

It’s also much richer in vitamins and minerals than standard cheese. The nutritional yeast included in the mixture is high in B vitamins and also contains selenium and potassium! Its a WONDER CHEESE!

Here’s the recipe:

• Soak a cup full of cashews (just a few hours, I did 3, but can leave overnight)
• Rinse them, and add to a blender along with:
• A cup of water
• 1 Tbsp mustard
• 1/4 cup of nutritional yeast
• Sprinkle of S&P
• The juice of 1 lemon
• 1 Garlic glove

Blend until thick and creamy (add water or yeast to get thicker/thinner)! Pour out and VOILA!!!
*I also sprinkled with some ground coriander which worked well!*
