I like to inspire people to believe that it can be super easy to create tasty recipes and meals with simple ingredients. I am not a chef, but my nutrition knowledge and my love of cooking (and eating) means I have picked up a decent amount of knowledge to create good food.

Burgers are Michiel’s favourite…so it was time to get our hands dirty and create a great burger together. Chickpea and Corn Burgers, 2 ingredients that go super well together, and bind perfectly with other ingredients to make the light, tasty vegan burgers, that are so easy to make.

  • Chickpeas are great for the vegan athlete – packing in (per cup) at 45 grams of carbs, 4 grams of good fat, 15 grams of protein and 13 grams of fibre. That same cup serving also meets 70% of the daily value for folate (which plays an important role in the production of red blood cells) and 26% for iron, which we know how important is to get in our diet. It’s also a great source of a number of other minerals including magnesium, zinc and copper, as well B-vitamins.

I was excited to show Michiel just how easy it was to create these burgers!

CHICKCORN BURGERS 

🔶 INGREDIENTS 🔶

🔺1 tin of chickpeas
🔺1 tin of corn (maize)
🔺1/2 a bunch of fresh coriander
🔺1/2 tbsp Cumin
🔺1 lemon zest
🔺3 tbsp wholemeal flour
🔺Coconut oil, for cooking

🔶 METHOD 🔶

🔺Add the chickpeas, corn, herbs and spices to a bowl, and mix with your hands (or use a food processor if available, we didn’t and it worked fine getting our hands in there)
🔺Add the flour and mix together, creating a sticky mixture (lumps are ok)
🔺Create patties, and add to a hot pan with coconut oil. Cook for 5 minutes and flip when golden on one side.

We enjoyed on a vegan bun, with lettuce & tomatoes!
