Vegan pizza. Something I actually didn’t think existed…I mean I know it can just be bread, with tomato and toppings, but if there is one thing I missed since becoming vegan. It’s pizza. The cheesy, loaded, deliciousness that only comes from PIZZA (I’m Italian – what can I say!)…
You can imagine my sheer delight when we found (totally by accident) pizza spot Verace in Santiago, that had this sign outside…
We of course sat right down and ordered PIZZA. So exciting! It came, mouthwateringly delicious as expected, and the cheese tasted just perfect! So flavoursome! I was yet to find a vegan cheese that really tasted like cheese, it this totally hit the spot! YAY!
When in Barcelona – we couldn’t stop thinking of these pizzas and went on the hunt to make our very own!
Violife Cheese! Found in Veritas Barcelona. I was skeptical – but hopeful we could recreate the Chilean cheesiness!
Ingredients:
- Pizza bases
- Tomato sauce (jar or puree is fine)
- Vegan friendly cheese
- Olive oil
- Oregano & Basil (preferably fresh, but dry is fine too!)
- Salt & Pepper for seasoning
- Vegetables (any you like!)
After smothering in tomato sauce & slices of our new found cheese – I then loaded the pizza bases full of greens, as you can see….(I think we went over board with the broccoli – but when you feel like broccoli, you just have to have broccoli!!). We also used: peppers, onions, fresh tomatoes, mushrooms, sweetcorn, courgette & spinach…but really, most vegetables will work, so choose your favourite!
Cooking had to be on a low heat (150) and for around 30 minutes, because they were so loaded! But my goodness, SO worth it!! An extra sprinking of oregano and basil, a glug of good olive oil – voila – home made pizzas – full of nutritional value, totally vegan, and super easy to make! Who needs restaurants…
